Lazy Girl's Balsamic Tahini Dressing
Do you know how much I hate making salad dressings?
I don't know how it developed, but I have this intense aversion to salad dressing recipes with more than 3-4 ingredients. It's like... I just made this meal/salad/thing and I feel like I should be done with the cooking... please don't make me pull out seven bottles of vinegar/tamari/maple syrup/miso/lemon juice/spices, chop up 3 cloves of garlic and pre-soak 30 cashews for the stinkin' dressing. Am I just exceedingly lazy or does that bother other people, too? I mean, I know homemade dressing always tastes waaaaaay better and is waaaaaay better for you, but I usually just end up buying the expensive stuff at the store or drizzling a little lemon and olive oil on my greens and calling it a day. And let's be honest, neither of those options are really ideal.
I want to convey my true feelings about homemade dressings so that you'll be able to respond appropriately when I tell you that today I discovered the dressing recipe of my dreams. It's true! My woes are officially over thanks to three ingredients that create some serious flavour with very minimal effort on my part. There is no chopping or soaking or waiting for a perfectly ripe avocado or dirtying up a clean blender involved. Nope, it's just a simple scoop-and-stir operation, my friends, which means that it can be made in approximately 60 seconds. PRAISE HANDS. I promise you, you're going to want to eat all the salad once you try this.
In a little bowl or jar, stir together:
3 Tablespoons tahini
2 tablespoons tamari
3 tablespoons balsamic vinegar
2-3 tablespoons water (add more if you like it thin)
And there you have it! Life changing dressing for the laziest among us. Eat and rejoice! (And try not to weep over all the time you've wasted making annoyingly complicated dressings in the past. What's done is done, friends.)
