Tropical Vacation Green Smoothie
Coming atcha from the beautiful island of Oahu!! I'm on vacation with the fam and loving every second of island life! Last night we went down to the farmer's market, which is always one of my favourite things to do when we travel. There's nothing better than seeing the local food culture up close. I wandered off on my own to admire the produce and stock up on little baby "apple bananas" (I'm addicted) and I also ended up finding some lovely all natural organic sunscreen! Success!
For dinner we all tried something different from all the food vendors that were there, and even though my local grass fed organic burger was pretty flipping delicious (I was just in that kind of mood- no guilt here!), I think the taste winner was these gorgeous green smoothies that my sis and her bestie picked up (they're the babes in the photo). Tropical, fresh, full of flavourful herbs and super green. Just how I like em. This morning we recreated them at our airbnb and they were just as tasty!
This recipe makes 4 medium or 2 really big smoothies. And I have to say, they don't technically fit my smoothie rules (I usually like to add some fat and protein for better blood sugar balancing) but they're great for a little snack or a pre-breakfast boost. Either way, you're getting a ton of greens, fibre and micronutrients, which is always going to make you feel fabulous! There's no real directions- don't bother de-stemming the herbs or the kale- just throw all the ingredients in a big blender and whizz it up! Enjoy!
2 cups pineapple (mango would also work!)
2 cups spinach
1 cup kale
handful of mint
handful of thai basil
2 cups ice
water or coconut water to blend
