No Bake Seedy Granola

I came up with this recipe after trying several seedy cereals on the market like “Holy Crap”, and also experimenting with “rawnola” -a raw foodie version of granola using dates and oats. Cereal is one of my favourite ways to start the day, but neither of those healthy versions really hit the mark for me. So here’s my spin- a combo of both of them! Using dates makes this granola sweet and also a little “clumpy” without having to use added sugar or go through the long process of baking. I love that the addition of chia flax make it thicken up when you add milk or yogurt, too. I recommend to let it sit for 5 minutes with some almond milk before eating- or don’t if you like it more crunchy! Either way, this is an incredibly healthy and delicious way to start the day.

No Bake Seedy Granola (makes ~6 servings)
1 cup pitted dates
1 cup raw unsalted cashews
1/2 cup coconut flakes
1 cup rolled oats
1/4 cup flax seeds
1/4 cup hemp hearts
1/4 cup chia seeds
1/2 tsp cinnamon


Directions
1. Add dates and cashews to the bowl of a food processor. Blitz until dates and cashews are broken down but not smooth yet. Some texture is good.
2. Add coconut and oats and blitz again until all the pieces are roughly the same size.
3. Transfer mixture to a large bowl and add the flax, hemp, chia and cinnamon. Stir well to combine.
4. Store in an airtight jar or glass container in the fridge. Use on top of yogurt or smoothie bowls, or with almond milk for a more classic cereal vibe.
