Tropical Mango Coconut Oatmeal Bites

These little bites make a great quick breakfast or snack and they’re really simple to whip up. They’re especially great for kids as an alternative to packaged snacks, and they travel well in a diaper bag!

Tropical Mango Coconut Oatmeal Bites

2 cups quick oatmeal
3 tbsp chia seeds
1/2 cup shredded coconut (unsweetened)
1 can full fat coconut milk
1/4 cup maple syrup
1/4 tsp salt
1 tsp baking powder
1/3 cup dried mango, finely chopped (make sure to find an unsweetened option- dried pineapple would be yummy, too!)

Directions

  1. Preheat your oven to 375oF (190oC) and line a muffin pan with liners.

  2. Combine oats, coconut, salt and baking powder in a large bowl and set aside.

  3. In a separate bowl, whisk together coconut milk, maple syrup and chia seeds.

  4. Combine wet and dry ingredients and fold in the dried mango. Allow the mixture to sit for 5-10 minutes before scooping 1/4 cup of the batter into silicone muffin liners (or a greased muffin tin).

  5. Bake for 24 to 28 minutes or until the muffins are golden brown around the edges and just firm to the touch. Let the muffins cool in the pan for 5 minutes before transferring to a cooling rack to cool completely. Enjoy!
